Tom Coosemans makes a sleek range of pralines filled with a combination of milk chocolate ganache with caramel of Sicilian limes, or lightly salted hazelnut praline with passion fruit jelly and a peated whiskey ganache. Or his absolute signature praline filled with praline smoked on olive wood flakes. For the fillings, he works with hazelnuts from Piemonte, pistachios from Bronte, almonds from Avola and oranges and lemons from Corsica and Sicily. He considers block chocolate with roasted linseed, rosemary, chili pepper, salt and white chocolate to be his most innovative creation. New this year is a mellow cake with orange jelly and soy sauce.
